Chile Relleno

I love chile rellenos but the biggest problem I have is the batter on the outside. Most of the time it’s  so thick I taste the cheese and batter more than the actual pepper. This is the great thing about cooking yourself, make it the way you fucking want!

Broil on all sides to get the skin blistering and peel

Slit a “T” into the pepper, gut and stuff with cheese. I used mozzarella.

Roll the stuffed pepper in flour so the batter sticks to it, then roll in batter (I used 3 eggs and a tablespoon of flour) now fry or bake.

Add your favorite sides,  I topped it with a sauce I made from tomatoes, onions, garlic and olive oil. Only seemed right with the mozzarella…

* I’ll always remember those days going to Banana Split @ LAX in Hollywood every Sunday night. Amazing DJ line ups, people and environment, probably the best club atmosphere you could ever ask for PERIOD. The part that baffled me the most was the fact that AM would spin there on a regular. Thousands of people would watch him perform all over the world and this little hidden gem called Banana Split was blessed with his greatness every Sunday. So dope.

Dungeness Crab

Went to the store to pick up a lobster but with the recession here we decided to hold off on shelling out $40 and got a $20 crab the size of our sink.

Nothing beats eating seafood that fresh, it’s a totally different experience than that imitation crab in your california rolls. If it’s available at your local market there’s no reason not to make it yourself. Also, when we were eating dinner we saw a commercial for a Lobster Festival this weekend (we’ll be there tomorrow!). So glad we didn’t get that damn thing…

Avocados are almost as good as blueberries in enhancing brain health. While the avocodo is pretty fatty, the fat is monounsaturated; promoting increased circulation and bloodflow. The increased circulation from avocado nutrients is not only found in the body, but is highly prevalent in the brain.

Lala’s Argentine Grill

I always see this place every time I go to Melrose but have never tried it. Luckily today we had lunch with the homie Blake from Red Black and he told us to meet him here. This is the great thing about our industry, meetings are usually lunch with your friends and today it was at Lala’s. I got the Lomito Sandwich with rice on the side and a Stella to wash it down. Definitely couldn’t complain. The quality of the skirt steak was great and could have been a meal in itself, the rice was flavorful, but what pulled it all together was the “Argentine Sauce” (they probably just tried Americanizing the name but it’s normally called chimichurri).

Mango Avocado Flatbread Pizza

I had a bunch of left over ingredients from the mango salsa I made the other day so I tossed chopped mango, tomatoes and french feta cheese with a little olive oil. Made pizza sauce (tomato paste, fresh tomatoes,  onion, butter parmesan, oregano and basil) and toasted a couple flatbreads that I got from the Halal Market a block away. Threw it all together and cooked em in the oven (400) for about 15 minutes and when they were done added the avocado and chopped cilantro. This is my first time using feta or putting mango on a pizza but I must say it turned out bomb.

From scratch

I love BLT’s, I think they’re one of the most superlative sandwiches no matter what kind of bacon, lettuce and tomatoes you use. But here’s what happens when you get a professional writer/ food lover (Michael Ruhlman) to make one from scratch. The tomatoes and lettuce are home grown, mayo and bread are made fresh and the bacon/ pork belly was cooked in the oven (200 degrees) for 3-4 hours then crisped to perfection in a frying pan. Definitely got inspired to make my own bacon after seeing this picture.

It’s what’s for dinner…

I have no clue what cut of beef this is but it’s on sale at Ralph’s right now, this big ass piece was only $4+!! I just marinated it overnight, browned it with butter and oil in a frying pan and threw it in the oven (350 degrees) till the internal temp was at 125 (about a hour). It turned out amazing…
