Mortadella and Head Cheese Sandwich

For anyone that’s not familiar with it, head cheese is not a cheese, it’s meat pieces from the head of a calf, pig, sheep or cow  in aspic, with onion, black pepper, allspice, bay leaf, salt and/or vinegar. It usually includes meat from the feet, tongue and heart and is eaten cold or at room temperature as sandwich meat. Mmmmmmm

Now all you need is bread, mayo, veggies and spicy chimichurri sauce

I get my chimichurri sauce (and meat, bread, mate, empanadas, etc.) from a place up the street called El Gaucho in Redondo Beach. The sauce is made from parsley, garlic, bay leaves, oregano, red pepper, vinegar and oil. You can get it spicy or regular and use it as a sauce or marinade.

I’m dedicating this beautiful great tasting sandwich to all the meat eaters that read this blog and hate all the veggie dishes I post. If you like to put animal head, feet, tongue, heart and pig neck fat between two slices of bread (like I do) my hats off to you…
