While the macaroni is boiling make the cheese sauce by melting a stick of butter in a pan and stir while adding a tablespoon of flour (rue). Then add 2 cups of milk and about 4 cups of cheese.
Add whatever seasoning you like. I used salt, pepper, paprika and truffle oil
After 7-9 minutes drain the pasta, put back in the same pot, add cheese sauce and a little more cheese. Mix
Add to a baking pan with a little more cheese on top and place in a preheated 350 degree oven for 30 minutes
10 minutes before the mac n cheese is done I’ll add some crumbled bacon and throw it back in the oven
While the mac n cheese is baking start on the sliders.
I love the pork and beef combination in burgers. It’s not as popular but the pork adds another dimension of flavor and texture. For these I used half ground Berkshire pork and half 80/20 ground beef. I also added a little bit of tomato paste in the mix. After I shape the patties I season with salt and pepper.
Slice some onions
Then add everything on a hot cast iron skillet. Since the patties are small I cooked em for about 3 minutes on each side and let rest while the onions finished caramelizing.
While everything was cooking I toasted some Hawaiian rolls and combined everything together with some ketchup and Philippe’s hot mustard.
