Fish Sauce Vinaigrette

Fish sauce vinaigrette is like the ketchup and mustard of a lot of Asian households. It goes with almost everything like hot sauce but brings any bland dish to life. If you’re broke all you need is a bowl of rice, some cheap meat, fish sauce vinaigrette and you’ll have yourself a gourmet Yoshinoya dinner.

1/2 cup fish sauce

1/4 cup water

2 table spoons rice wine vinegar

Juice of 1 lime

1/4 cup sugar (or less)

1 garlic clove (minced)

2 red bird’s-eye chilies, thinly sliced

Combine all ingredients in a jar, this vinaigrette will keep up for a month in your refrigerator.

Kurobuta Pork Belly Banh Mi

Yeah I know authentic banh mi’s normally don’t come on a panini grilled ciabatta but Mendocino Farms take on this popular Vietnamese sandwich has me wondering if I’m ever going to set foot in a Lee’s Sandwiches ever again.  Not familiar with Kurobuta/ Berkshire pork? Well it’s one of the most juiciest, flavorful, tender meat you’ll ever taste. Give me a choice between Kobe beef or Berkshire pork and I’ll take that little black hog any day. This sandwich has Kurobuta pork belly that’s braised then caramelized to perfection with housemade pickled daikon and carrots, cilantro, cucumbers, jalapenos and chili aioli. The only team that compliments each other better than that is the LA Lakers. 3peat!
