Fried Wonton Tacos, Yellowtail Sashimi and Roasted Shishito Peppers

Usually I fry these wonton wrappers to make spicy tuna tostadas but I’ve always wanted to use them to make tacos. I’ve never seen wonton wrappers used like this before but they make perfect bite size hard tacos.

Grilled Shiitake mushrooms, beef tongue and Wagyu beef

Left- Soy sauce, apple, sugar, garlic and ginger marinated beef tongue with cilantro and onion. Middle- Shiitake mushrooms topped with daikon/cucumber slaw, spicy mayo and shredded seaweed. Right- Wagyu beef topped with scallions, sesame seeds and yuzu kosho vinaigrette.

On a Sunday afternoon

Sundays have always been dedicated to hangovers and good food. This past weekend we grilled up some ginger pork, pork belly skewers and Wagyu beef lettuce wraps with pickled cucumber, daikon and red onions with a sauce made from lemon, scallions, ginger and soy sauce.

Yakiniku

Yakiniku in Japanese means “grilled meat” or in it’s broadest sense, refers to grilled meat dishes.  Last night we had Wagyu beef, Berkshire pork sausages and thinly sliced beef tongue. Any Asian male will tell you grilled meat and rice is in the same category as sex, cars and alcohol.

Take It Slow

Beef Bourguignon (Burgundy), where have you been all my life? Slow cooking is easy and well worth it- throw everything in a pot for 2-3 hours, stirring every 20 minutes and the outcome is the most tender meat and mouth-watering sauce.

I also added both fresh and black garlic. They make black garlic by fermenting whole bulbs at a high temperature. The results are a umami rich sweet and syrupy flavor. Check out the difference between the two

While the stew was cooking I diced some potatoes, seasoned and steamed. Then left aside till the stew was ready

After about an hour I added some carrots and bacon

Left the pot on low heat for another hour and a half (or longer)

You know the beef is done when it’s tender enough to break apart with a fork. This was definitely done…

It’s what’s for dinner…

I have no clue what cut of beef this is but it’s on sale at Ralph’s right now, this big ass piece was only $4+!! I just marinated it overnight, browned it with butter and oil in a frying pan and threw it in the oven (350 degrees) till the internal temp was at 125 (about a hour). It turned out amazing…
