Soy chorizo con huevos

Trader Joe’s Soy Chorizo
For those of you that don’t know chorizo is a staple in Mexican cuisine. It’s commonly used in breakfast to make chorizo con huevos (fried chorizo with scrambled eggs) but also can be included in tacos, burritos and tortas. Almost anything you make with ground meat you can substitute with chorizo as long as you remember it’s already heavily seasoned with chili powder, paprika, etc. This brings me to this little gem at Trader Joe’s- Soy Chorizo. There’s a couple different foods I love that can never be replaced with vegetarian ingredients like a philly cheese steak, cheese burger, bratwurst and hot dogs. Those things are all about the meat and chorizo was in that category until I tried this. It’s damn good and for $2 it’s definitely worth getting.
All I did was cube up and fry a couple potatoes, season with garlic and spices and right before the potatoes were done cooking I added the soy chorizo (make sure you remove the casing). Topped it with some fresh cilantro and of course ate it with some eggs and toast. Soo good…

* Just because I blog about what I cook up doesn’t make me think I’m a great chef or make me think my culinary skills are superior to yours. I try and make these recipes as basic as possible to give you an idea on how easy it is to make great food. Obviously you should keep it creative and add your own flare to em but always remember, why go out and eat when you can make it yourself.
