Fresh (French Bread Pizza)

From the five minute healthy breakfast omelet to the slow cooked Sunday stew there’s one key ingredient that will complete any meal, something fresh. One of my all time favorite/ freshest most simple meals ever is a Saturday morning French bread pizza. Right when I wake up we head straight down to the farmers market to get tomatoes, basil and goat cheese made that morning at 4am from Soledad Goats and driven down to the market from Hanford, CA. Then we stop at Giuliano’s Bakery for some fresh baked bread and mozzarella cheese.

I make a sauce by sweating a half a chopped onion and five cloves of minced garlic in olive oil. Then add 14 oz. of canned San Marzano tomatoes (with it’s liquid), salt, pepper, oregano, Parmesan cheese and crushed red peppers. Simmer for 30 minutes to let the liquid reduce to half.

Slice the bread, add a little sauce, chopped basil, cheese, sliced tomatoes and more chopped basil on top. Then place in a 350 degree pre heated oven for 9 minutes.

Vegan Chili & Organic Cheese Stuffed Portobello Mushroom Sliders

For me nothing will ever replace a cheeseburger but mushrooms are a great substitute for meat when you’re trying to eat healthy. I picked up some fresh portobellos from the Torrance Farmers Market and decided to make a twist on one of my favorite bar foods.

Clean, de-stem and score

Brush with balsamic vinegar

Grill the bottom side for 5 minutes

Flip

Add the chili and cheese

Grill for another 8 minutes

Toast bread

Add condiments and fresh arugula

Trader Joe’s Spicy Italian Chicken Sausage

A great thing to do whenever you buy food is to check the ingredients on the back, if you can’t pronounce it don’t eat it (unless disodium 5′-ribonucleotide and sodium metabisulphite is on the list for dinner). Sausage and hot dog meat is processed with  so many chemicals my spell check doesn’t even know what the hell is in it. It’s always hard to find dogs that are minimally processed with natural ingredients especially when you’re a sausage lover like me. No homo.

These Trader Joe’s Chicken Sausages are the answer, they’re all natural and made from chicken raised with no antibiotics. Since they’re nice and healthy a great way to screw em all up again is to add some Philippe’s spicy mustard, chili and cheese…
