Ramen Broth

The most important part of any good soup is a good broth. It should be a meal on its own filled with flavor, depth and complexity. Anything else you put into the broth should be there as a compliment, not to overpower it. Here’s a simple recipe I made with a couple of key ingredients (chicken, miso and shiitake mushrooms).

Fill a pot with 6 cups of water and 2 cups of dried shiitake mushrooms. Simmer on high heat for 45 minutes

Season whole chicken with olive oil, salt and pepper and roast till fully cooked.

In a separate small pot add 3 cups of water, 2 teaspoons of miso paste, 1 teaspoon of hon-dashi and the neck of the chicken (only if your whole chicken came with it). Simmer on high heat.

After the pot of mushrooms have simmered for 45 minutes they should be plump and re-hydrated and have lent the broth their color and aroma. Turn off heat, rinse konbu in cold water and add to the mushroom broth. Steep for 20 minutes and strain both pots.

You can save the mushrooms to pickle and use as a topping for the ramen.

By this time the chicken should have been done, taken out of the oven and rested.

Carve, save the thighs, legs and breast for another meal and add the rest to a pot filled with 6 cups of water and 3 tablespoons of salt.

Simmer on high heat for 2 hours reducing the liquid to about half.

After 2 hours add a bulb of garlic, green onions and a cup of sliced ginger. Also add 4 cups of mushroom stock and 2 cups of miso stock. Let everything simmer on low heat for another 45 minutes.

Strain and add toppings. I added seaweed, sesame seeds, green onion, chili oil, boiled noodles, pickled shiitake mushrooms, soft-boiled egg and braised pork belly…

This definitely isn’t that $0.50 packet of instant noodles I grew up on…

Homemade Chicken Ramen

We get these awesome eggs and fresh chicken from La Bahn Ranch a vendor at the Torrance Farmers Market. The chicken is cage free, grain fed and hormone/antibiotic free which equals the creamiest eggs and meat so fresh it was killed the day before we purchased it. Since I’ve been feeling under the weather this whole week I decided to eat this delicious bird in liquid form. I’m still working on the recipe but once I figure it out I’ll make sure to share it with you (all 5 of you).

Trader Joe’s Spicy Italian Chicken Sausage

A great thing to do whenever you buy food is to check the ingredients on the back, if you can’t pronounce it don’t eat it (unless disodium 5′-ribonucleotide and sodium metabisulphite is on the list for dinner). Sausage and hot dog meat is processed with  so many chemicals my spell check doesn’t even know what the hell is in it. It’s always hard to find dogs that are minimally processed with natural ingredients especially when you’re a sausage lover like me. No homo.

These Trader Joe’s Chicken Sausages are the answer, they’re all natural and made from chicken raised with no antibiotics. Since they’re nice and healthy a great way to screw em all up again is to add some Philippe’s spicy mustard, chili and cheese…

Tandoori Chicken Tacos

Lately I’ve been reading up on Indian, Middle Eastern and North African  cooking techniques and cuisines. What fascinates me is the slow cooking of stews, braised meats and the use of spices and ingredients I’ve never even heard of. The great thing about knowing cuisines from around the world is being able to infuse them together in your own cooking. Here’s some basic tacos I made with tandoori chicken.

Make the marinade with yogurt, lemon juice, minced garlic, cayenne pepper, paprika, cumin, coriander, cardamom, salt and pepper.

Baked Chicken Salad

I’m not a huge fan of chicken breast, I think they’re dry and have no flavor. They always need some sort of sauce to make it taste decent not like a good ole american piece of beef. Put some salt and pepper on a medium rare rib eye and I’ll eat that everyday. Chicken thighs, drumsticks and wings are a different story. Yeah those cuts contain a lot of fat but I don’t give a shit, I just don’t eat it as much. But when I do I love my skin crispy…

After seasoning with salt, pepper, cumin, corriander, paprika and togarashi I’ll throw em on a frying pan to get the skin nice and crispy. After that they go in a preheated oven (400) for about 20 minutes.

Flossie’s Southern Cuisine (Torrance, CA)

Sunday’s are good for eating soul food because you can stuff your fat face with greasy fried buttery goodness, pass out, wake up and do it again with all your left overs. This is basically what happened yesterday when we decided to grab lunch at Flossie’s. For the past 2 years I’ve lived on the same street as this place and have only eaten here less than 3 times. I would think since there’s a soul food spot within throwing distance of our apartment we would be there at least once a week. And it seems like EVERYONE loves soul food and EVERYONE loves talking about how much they love soul food, especially all my friends that aren’t black. I’ll bring up the fact that theres a soul food spot on the corner and out of nowhere they have a Southern accent, “Ohh soul food? I love me some fried chiiicken, some greens, some cooorrrn bread.”  And the whole time I’m thinking in my head, “Dude you’re Asian from Orange County, stop that.”

Anyways for about $12 you get 1 entree, 3 sides, cornbread or biscuits, dessert and a drink…

And I got ox tail, collard/ mustard greens, lima beans n okra, mac n cheese, biscuits, caramel cake and Kool Aid.

The highlight was definitely the fried chicken, the skin was crispy and not too oily, the ox tail had great mouth-watering flavor but some pieces seemed to be over cooked and the mac n cheese just melted when you ate it. The other sides were OK but the lima beans with okra were surprisingly good too. I want to go back for the short ribs but the fried chicken is a must try.
